Prepare meat of your choice in advance (steaks, chicken, fish, or shrimp)
by liberally covering with ANDY ROO'S CAJUN BLACKENED SEASONING. Rub spices
into meat thoroughly. On stove at high heat, place your heavy bottomed
skillet (iron skillet preferably, and use your vent!) when skillet is very
hot, put in meat - watch closely as meat is seared, turn after 2 minutes.
Cook on second side for 2 minutes. That's it!

In a skillet brown 1 lb. ground beef. Drain excess oil. Add 3 tbsp. ANDY ROO'S CAJUN STYLE DIRTY RICE SEASONING, (1 tsp. salt if desired) cook approximately 2 minutes. In another pot, boil 3-1/2 cups water. Add 1 cup rice, stir well. Simmer on medium heat for 5 minutes. Add beef, stir & cook for 12-15 minutes. Serve after all water is absorbed. Serves 4 to 5. Cube 1 pound of chicken breasts into boneless nuggets. Sprinkle nuggets
with ANDY ROO'S CAJUN FRIED CHICKEN SEASONING. Rub spices into chicken
thoroughly. Refrigerate for 15 minutes. In a small bowl, beat 2 eggs. Dip
chicken nuggets in egg, then batter nuggets in unseasoned bread crumbs.
Deep fry in preheated vegetable oil until golden brown. Enjoy!

In a large pot, brown (1) cut up chicken, and 1lb. andouille (or your
favorite local smoked sausage). Remove from pot. In the same pot add 3/4
cup flour to make the "roux". Cook over medium heat `till dark brown. Turn
off heat and gradually stir in 2 quarts water. Bring to rapid boil, Add
chicken, andouille, (1) bay leaf, and 4 tsps. ANDY ROO'S CREOLE GUMBO SEASONING.
Lower heat and simmer 1 1/2 hours. Serve over rice.

In a heavy bottomed pot, bring 3-1/2 cups of water to boil. Add 6 tsp.
ANDY ROO'S CAJUN JAMBALAYA SEASONING, and 1 cup rice (add 1 tsp. salt if
desired). Brown 1 lb. sausage, drain fat, then add to pot. If desired,
add shrimp or chicken. Stir well. Cover and cook for 30 minutes on low
heat or until all liquid is absorbed. Contents good for 4 to 6 cups of
rice.

NEW ORLEANS STYLE GRILLED FISH Select your favorite filet of fish-trout, catfish, bass, red snapper,
tuna, etc. Sprinkle 2 tbsps. ANDY ROO'S GRILLED FISH SEASONING over fish,
followed by a 1 tsp. dash of Worcestershire sauce. Place a pat of butter
on the filet. When the grill is hot, seat fish evenly on both sides, taking
care not to overcook. Enjoy!

NEW ORLEANS STYLE CREOLE ITALIAN RED GRAVY In skillet, sauté 1 chopped medium onion, 1/2 chopped bell pepper,
then add (2) 15 oz. cans tomato sauce, (1) small can tomato paste, 4-6
cups water & 2 tbsp. ANDY ROO'S CREOLE ITALIAN SEASONING. Stir/ blend
well. Simmer on medium heat until sauce thickens. Add salt & pepper
as desired.

NEW ORLEANS STYLE BBQ SHRIMP
In a large skillet melt 1/2 cup of butter on medium heat. When butter
is completely melted, add 3 tbsp. of Worcestershire sauce. Place 1 lb.
of large, unpeeled (head on) shrimp. Add 1/4 cup olive oil, 2 tbsp. ANDY
ROO'S. Cook shrimp 3-5 minutes, turn & add 1 tbsp. ANDY ROO'S. Cook
until shrimp are done. Serve hot with French bread. (1 lb. of shrimp serves
3 people.) Contents good for 6 to 8 lbs. of shrimp.

NEW ORLEANS RED BEAN CREOLE
On high heat, bring 4 quarts water to a boil. Place 1 lb. red beans
in water, simmer on low heat. At approximately 1 hr., brown 1 lb. sausage
or ham cubes. Add to beans with 3 tablespoons of ANDY ROO'S RED BEANS SEASONING.
Cook for approximately 1 hr. more, stirring occasionally and cook until
tender. Add salt to taste. Server hot over rice.
